I agree with some of the others, it's good to have an overall goal to reach, say interceptors for pvp, but you also need some sort of income in the mean time and maybe you already do. Just don't want to see you buy that new interceptor with all your cash and promptly get it blown to pieces in low sec with no money for another.
I was in Eve Uni for a year or so and I can't say enough good things about them. The classes are very profesionally done as well as the enormous amount of content in the forums and saved mp3's that walk you through everything from setting up your overview to trading, industry and fleet movement.
It should almost be required for all new people to go through it, plus with the occasional war dec you get some pvp experience as well. You can't go wrong joining and you can stay as long as you like. I do recommend that you participate in the classes and so forth, after your first one you'll realize how helpful they are and fun as well as oftentimes you practice on your corpmates.

I'd have to say Eve as well is the closest to your description. Possibly AO.
Anarchy Online. I've played most of the pay to play games listed to the left as well as several of the free ones and I believe AO is the best of the bunch. Yes the graphics are dated but hopefully the dx9 upgrade will happen soon but the gameplay is very well done. Great class/skill system and nothing can touch the sheer amount of item slots that this one has.
There is a fairly steep learning curve to this game which is one of the main reason it appeals to me. That also keeps a fair amount of the WoW kiddies out so the community is fairly mature. With only 2 US servers it's fairly concentrated as well.
The nice thing is you can start with a free account and then move into a paid account after you've tried it out a bit. You are missing tons with the free or 'froob' account though.
It also has done pvp right as far as I'm concerned. Battlestations where you can earn points for nice items with team based pvp and then tower wars where you have a reason to own real estate in the game.

Actually the models in EQ have been redone twice, pc models anyway and a good share of the mobs. And many of the expansions have updated the graphics about as far as this engine can take it, they even have redone many of the original zones.
Hopefully we get some new information on the state o the AO update, the game truly deserves to be updated, I know several friends that would be more willing to spend some time getting to learn the fairly steep learning curve if the graphics were a bit better.
