It sucks and is highly frustrating running into the folks in Eve that have to experience this early on.
Yes - there are plenty of folks in Eve that are solely there to gank/grief noobs and they enjoy doing it. They fail at being able to compete against other non-noobs and due to their tiny ego's and the fact that they suck makes them angry and they vent via destroying a noob cause that means they are now UBAR!!! /fail
Yes - like EVERY other MMO there are assholes in Eve. There are immature fools that smack talk. Etc etc, but, this is not a unique quality to Eve, it's a unique quality to the Internet. Sounds like you've had the unfortunate bit of running into alot of them - akin to spending all of your time in the Barrens General Chat...
Yes - You will get taken advantage of/killed/ripped off/cheated/scammed/etc etc in Eve. It's going to happen. They don't hold your hand and, like life, bad things can and do happen.
Yes - MMORPG.com is chocked full of Eve Fanbois that flip out at the first sign of anyone talking down about their game. This, again, is not a unique quality to Eve - head to any other forums and talk down about the game being discussed there and you will run into similar folks. In defense of the fanbois here I will point out that more often than not people, knowing the seriousness of the fanbois here, come in here and make up bald - flat out lies about Eve with the sole purpose of getting the fanboi's panties in a wad - and boy... it works big time. The fanbois in this section are used to it but they still get a lil too jumpy sometimes. I don't think that means you can judge the entire Eve community based on that though. With over 250K active accounts I doubt you've (any of us) have experienced enough of the community to make blanket statements about them all.
I've been playing for 2 years now and, fortunately, i've had a different experience than you. The folks I have met and know in Eve are great people. They don't can bait noobs. They don't talk smack. They help each-other out. I've got a little bit of experience in MMO's and I think that I can safely say that, community wise, Eve is no better or worse than any of the other games you see listed below. All communities on the internet have their crazies and Eve is no different. I hope you come back to Eve sometime after this chain of events is behind you. There are good people in this game and the game itself is made of win (imo).

Ordered. Again. Third year I've done so. Yep, came late both years - fortunately my wall calendar is not the only way I can tell what day it is so it being late isn't the end of my world. I've been happy with the quality with the last two, don't expect much different with this one - though I'll admit to not being sure what kind of quality I'm supposed to expect from a wall calendar in the first place...
Don't much care what games they put on it - I don't give much of my money to charity but this is something I like having (wall calendar), it has pictures of stuff I like (mmo's), it's proceeds (they claim, never actually followed the money) go to a good cause, and it makes a good convo piece hanging in my office... :p
To the makers of the calendar - thanks once again!

PvP. At no time are you safe from a suicide gankx0r or a can flipper. Not to mention that roids do not have an infinite amount of ore so if someone else beats you to the spot and strips it out, well, you lose.

Strictly PvE - until you go to sell it.
production?
Never done it. IMO, since everything in Eve is created by players and Eve is a primarily PvP game then it could be argued that Production is a PvP task.
sellling the ores and items you've researched, mined, refined, and/or produced?
No question PvP. You have no choice but to compete with other players pricing.
trading? as in, buying stuff, filling a hauler and selling it someplace else...
Same as above for the same reason.

running courier missions?
75/25? 50/50? Why are you running the courier missions? For ISK to better fit your ship for more courier missions? Do you have to risk lowsec? Do you still risk suicide gankx0rz? IMO Courier's are probably the closest you can get to being pure PvE in Eve.
running combat missions?
Again, missioning period is a mostly PvE aspect -- cept when you run missions in lowsec, get scanned down and blown the f**k up. Or when you are missioning in highsec and someone scans you down and steals all your salvage. Course, there's the whole reason to run missions, ISK, which is mainly used to purchase more PvP designed stuff.
exploration? taking advantage of the things you find while exploring?
TBH, I know nothing of this aspect of Eve either though I would hazard to say it's a PvE task but i'd also imagine you have to compete with other players who could possibly be goign for the same site and or simply going for you.
hauling goods to/from high-, low-, &/or null-sec and back and forth between them all?
What for? Not that it matters, you always stand the chance of being a PvP target to suicidal folks in highsec and anything that moves in low-nullsec.
salvaging?
Primarily a PvE task cept, as mentioned above, when someone scans you down and steals your salvage...

@ OP. I, personally, like the fact that CCP doesn't try to sugar coat their missions and attempt to add "story" or something like that. I have yet to play a MMO, and i've got a few under my belt, that has any sort of original PvE system. Go here and kill x of y. Take x over to y. Go to y and bring back x. Go talk to x and get y and take it to z and then go back and kill x with y at z etc etc and so on. It's all the same all the time, Eve just throws that in your face. I run missions solely as an ISK making thing and I make good ISK doing so. I won't argue that some folks find Eve boring, that is clearly evidenced by my attempting to recruit many of my rl friends to Eve only to have them quit before their first month is up. It should come as no surprise to anyone that everyone doesn't like the same thing.
